Recipe: Oatmeal Chocolate Caramel Bars

A couple months ago D was telling us that a guy on his crew’s girlfriend makes the best cookies. Of course I instantly got defensive, “well they haven’t ever tasted something I baked.” So D chimed in with his crew, “my gf’s are better.” And so the bake-off began. 

The rules were in the December hitch- girlfriends sent baked good up to Alaska for a taste test. 

Addie & I scoured pinterest, blogs, etc to find recipes worth testing. We came across this post. We knew… this is the one! 

Addie and I both tried it in separate kitchens on the same night. Mine tanked big time. Addie’s turned out good and she encouraged me to try again and that this was what we had to go with. So, I tried again. 

Thank god, because these are INSANELY GOOD. 

Let’s first start with your ingredients. 

So first steps: Unwrap all the caramels (zzzz) I used 1.5 bags of caramels. (about 2 cups) add those with heavy cream to a saucepan over medium heat and stir until creamy. Then set aside.

Then combine all the flour, brown sugar, oats, melted butter and baking powder in a large bowl.

Then you place about 1/2 of the oats mixture in the bottom of a 9×13 baking dish.

Then bake at 350F for 5-7 min. until golden.
Next, add a layer of chocolate chips. The original recipe called for a whole bag- I only used about 2/3 and it worked much better.

Then the best part!!! The caramel layer. Cover the chips with the caramel sauce. 

Then cover the rest of the caramel sauce with the remaining oats mixture.
Bake for 10-12 minutes in the oven. You DO NOT want to over bake these. The caramel will get rock hard. Keep an eye on it. 
Should be golden brown and gooey! Hope you love it. 
Here is the ingredients again:
45 caramel squares, unwrapped
1/2 cup heavy cream
3/4 cup butter, melted
3/4 cup brown sugar, packed
1 cup flour
1 cup rolled oats
1 teaspoon baking soda
4 ounces semisweet chocolate chips
