As most of you know, I am a Ramen fanatic. When I heard the news that Marukin Ramen (A Toyko ramen chain) was coming to PDX. I was pumped! I attended the soft opening last week. I really enjoyed this ramen and noticed it is much different from other ramens around the city. The difference for me was the broth. It has a richness and complexity in flavor. You can really taste the developed flavors and it leaves you feeling warm and satisfied. I also love the simple toppings and freshness of the noodles. Everything was cooked well and really played well with each other. I can’t wait to head back to Marukin Ramen soon. A top ramen in PDX, if you ask me 🙂
Marukin Ramen serves a variety of different ramen with different types of broth:
Tokyo Shoyu
Marukin
Tonkotsu Shoyu
Marukin Red
Miso
Marukin Vegan
Also serving appetizers, sake and beer! I ordered the Marukin Red. (pictured with red broth below) I am a spicy food lover, and honestly this didn’t have much kick- (so if you don’t love spicy, you can still try this) but the flavor was fantastic. I’ve never had a “red’ ramen, so I was eager to try something new. The “Marukin” broth is rich, creamy and flavorful. I saw several people also order the “Shoyu” broth, which is more of a soy sauce base, it also looked fabulous. I don’t think you can really go wrong here. All the dishes are worth a shot- even the vegan! (I heard great reviews!)
You can now have some Marukin Ramen for yourself. They are still doing the soft opening. Daily hours are 11a-3p. The grand opening April 1. The new hours will be 11a-9p. I highly recommend you stop by!

Their ramen is so good! I went a few weeks ago and was loving everything I tried. It’s also a bit more affordable than some of the other places in PDX.

I’ve been on a bit of a ramen kick lately, and even visited a few of the highly touted ramen dens in town in search of the perfect bowl. Unfortunately, the ones I’ve visited have been only OK so far, and definitely didn’t live up to the hype. However, I am ever-hopeful, so I will have to give this one a try. Thanks, Rachel!

When I traveled through SE Asia, I passed many of these types of restaurants. They always smelled so delicious, but I never stopped in. I think I would enjoy the vegan or miso variety.
