Kristi, my roommate, sometimes follows a Paleo diet. Paleo “is an effort to eat like we used to back in the day…WAY back in the day. If a caveman couldn’t eat it, neither can you. This means anything we could hunt or find – meats, fish, nuts, leafy greens, regional veggies, and seeds.” While I think this diet sounds impossible (I need cheese), she has made some really awesome things.
Something she made from another food blogger (PaleOMG) was this recipe. They turned out so tasty! I thought I must share!
Almond Butter and Chocolate Cups (aka peanut butter cups)
First get all the ingredients together.
Measure out the coconut oil, honey, almond butter, salt and coconut oil into the blender.
Mix!!
Then pour into a mini cupcake pan. Then place in the freezer for 20-30 min to harden.
Gets a little messy, don’t worry! Now melt those “chocolate chips” in the microwave. Stirring every 15 seconds to make sure they don’t burn!
* note these are special dairy free, nut free, soy free chips, you can find them at Whole Foods.
Now, take the cupcake tin out of the freezer and place melted chocolate on top!
Place back into the freezer for 30-40 min.
Enjoy these tasty (kind of healthy) treats.

a spoonful of the mixture into 8-10 mini muffin tins
then put into freezer for
20-30 min.
Pour melted chocolate on top of each spoonful.
Place in freezer for
30-40 minutes until set.
Keep in the freezer before
serving.

These sound amaaaaaazing!! I love real food dessert treats and things with basic ingredients like these. Although chocolate chips (that is the best brand!) are almost too sweet for me sometimes!
I severely damaged my health being raw vegan for 3 years and have been recovering with a Paleo diet the past 1.5 years. It's been wonderful! There is no ONE Paleo diet for everyone (some Paleo people can tolerate cheese and high quality raw full-fat dairy) but it's about finding the right foods for your body – often in the same category of "food that has always been food."
