First things first- One morning I woke up early and was scrolling through my social media and saw The Londoner post this. I *swooned* and thought, hey maybe I could do this.

Back to the food.
These are my adaptation called: Gooey Egg Baskets
First, you need to get some dehydrated mushrooms. I found them near fresh mushrooms in the grocery store. To rehydrate them you soak them in warm water for 30 min and then rinse and pat dry.
Next take two rolls and cut the tops off and scoop out the insides to make a little basket.
Now put in your mushrooms, then an egg, 1 tbsp of cream, salt + pepper and thyme.
You need to wrap your little baskets in foil for the oven. Then ADD CHEESE!
Wrap them up and put them on a baking sheet. Into 390F oven!
Cooking time varies depending on how you like the yolk.
Runny yolk: 23 min
Soft yolk: 25 min
Hard yolk: 30 min
I did mine for 23 min…
Try it for yourself!
1 bread roll
1 egg
1 tbsp of cream
Gruyere cheese
salt/pepper/thyme
Bake at 390F
Devour! 🙂
You could make a ton of substitutions here to make them perfect for you. Some suggestions:
Ham & Sharp Cheddar
Bacon & Mozzarella & Rosemary
Smoked Salmon & Fontina
Sun dried tomatoes & Mozzarella & basil (caprese style!)

When I saw this on your Instagram feed, I was drooling and immediately had to go out to buy some dried mushrooms and rolls. I put cheese on the bottom AND top of mine though! It was sorta weird buying dehydrated mushrooms because I almost always buy fresh ones, but I forgot how the flavors were a bit more mushroom intense!
I adore Rosie at The Londoner! Her recipes always make my mouth water. Love this adaptation, and can't wait to try the variations at the bottom!

I saw these on your instagram this week and was so hoping you'd post a recipe! I make "eggs in a basket" all the time, but never thought to do it in nest like that. These look absolutely amazing! Can't wait to bring it out for this next weekend's brunch. My husband is going to flip.
