I just popped over to Houston for the weekend. This trip started like all good trips start…On a whim.
I was g-chatting (not while at work of course..) with Karla and we were saying we needed to get down to Houston to see our friend JUDYYYY who is in her residency at a hospital there. SOOO of course without thinking we booked tickets right then. TEJAS here we come.
So due to the lovely airlines that is Frontier, I arrived in Houston 2 hours late, which put a damper on any Friday night activities. We headed back to Judy’s apartment and ran over the usually topics: pets, love life, jobs, friends, family…etc. and went to sleep.
We woke up Saturday and we knew what needed to happen. TEX MEX. Judy had asked around and got the name of the “best place in Houston.” So we hopped into the car and headed to Ninfa’s.
Although, not in the BEST of neighborhoods- usually these places are gems. Ninfas fit the bill.
They bring you chips and four sauces. Two salsas and two guac type dips. ALL fantastic.
Judy has found a list somewhere that was, “100 reasons to live in Texas.” #1 was Queso. SO we ordered queso….good call. It was incredible.
This was my drink– their house margarita. IT WAS INCREDIBLE. I ordered another one.

I ordered the homemade tamales with chicken. I will warn you, they don’t photograph well, but they are amazing. Then we ordered mole ice cream AND sopapillas. Hey, it’s Texas!
Once back at Judy’s we started to get ready for our night out. Judy took us to Midtown area bars. Her co-worker Jacqueline also joined us. Needless to say we had too much fun.
Judy didn’t want her face shown on the internet…so this is the only photo I am allowed to use on the blog. haha take up your frustrations with her!
The night drew to a close, and we hopped into a cab and headed back to the apartment. I don’t often have crazy nights out, but when I do…it’s with these girls. SO happy to have a weekend with them. We’ve been through ups and down’s but I wouldn’t trade it for the world.
